Ingredients 
    
    - 1 F&Co chicken milanese
 - 1 focaccia cut in half
 - fresh tomato compote
 - freshly grated parmesan
 - handful of rocket
 - cold pressed olive oil to drizzle
 - 1 lemon, zest & juice
 - butter & oil to cook
 - Sea salt & Freshly cracked Black Pepper
 
Introduction
Here is my take on a classic chicken Milanese, sandwiched between slices of soft focaccia with unctuous sweet tomato compote, tangy Parmesan & peppery watercress salad. This makes for a stunning sandwich which is perfect for dining al fresco or sat in front of the tv relaxing.Method
- Air,shallow or deep fry the Milanese chicken until thoroughly cooked
 - Warm the tomato compote & bread ready to assemble
 - Spoon tomato onto the focaccia base, top with the chicken then toss some rocket with grated parmesan, olive oil & a little lemon & pile on top
 - Place the lid on top & serve
