Ingredients 
    
    - 1 small red cabbage finely shredded
 - 1 large white onion finely sliced
 - 1 fennel bulb finely shredded
 - 1 green apple peeled, cored & sliced
 - 50 g sugar
 - 50 g butter
 - 50 ml red wine vinegar
 - 250 ml red wine
 - 2 tbs. redcurrant jelly
 - Juice & Zest 1 orange
 - 1 tsp. coriander seeds crushed
 - Salt & cracked black pepper to taste
 
Introduction
A must have side dish for any Christmas feast.Method
- Bring sugar, liquids and seasonings to the simmer.
 - Add cabbage, apple, onion & fennel.
 - Simmer covered for 1 hour.
 - Remove lid and reduce liquid to syrup & the cabbage is tender & glossy.
 
Note: The cabbage can be prepared & cooked up to 72 hours in advance & reheated when required making for a super simple side dish to serve.
