Ingredients 
    
    - 1 x kg King Edwards / pipers
 - 4tbsp of either goose fat,beef dripping or lard
 - Maldon sea salt
 - 2 x Sprigs rosemary
 
Introduction
Sunday lunch would not be the same without delicious golden roast potatoesMethod
- Peel wash and cut potatoes into rough chunks, 4 or 6 per potato
 - Steam for 15 minutes then leave to cool and edges go floury
 - Heat roasting tray with chosen fat till smoking hot
 - Very carefully add potatoes and shake tray
 - Season with sea salt
 - Add rosemary and roast for a further 25 minutes shaking tray occasionally .
