Why this breed
A favourite amongst chefs, Sussex are a red breed of beef cattle, typically from the Weald of Sussex, Surrey and Kent. Descended from the draught oxen, they were selectively bred from the late 18th century to form a modern beef breed. The stronghold of Sussex cattle in Britain remains the Wealden counties of Sussex, Kent and Surrey, meaning they are rare elsewhere in Great Britain. It is thought that there are just 160 Traditional Sussex breeding cattle left.
