Ingredients 
    
    - The Burgers
 - 4 x F&Co Gourmet Turkey Burgers (patties)
 - 10 g unsalted butter
 - 1 x tbls light oil, duck or goose fat
 - 4 x Brioche buns
 - 80g crumbled Wenslydale or Lancashire cheese
 - 4 tbsp. spiced Red cabbage (homemade or store bought)
 - A handful of wild rocket leaves
 - 2 shallots peeled, sliced & fried until tender
 - Spiced Red Cabbage
 - 1 red cabbage finely shredded
 - 1 red onion thinly sliced
 - 1 diced Granny Smith apple
 - 125g butter
 - 125ml red wine or red wine vinegar
 - 75ml port
 - The juice and zest of 2 oranges
 - 150g sugar
 - 1tbsp mixed spices
 - 75g golden raisins

Method for Burgers
- Heat a heavy based non-stick frying pan over medium-heat. Split and toast the brioche buns until nice and golden, about 1 to 2 minutes, being careful, as they will burn quickly.
 - Remove & keep warm.For the turkey burgers gently rub a little oil or fat onto both sides.
 - Bring the frying pan to a medium heat then fry the patties, 5 to 6 minutes per side, until fully cooked through. In the last minute of cooking add the butter & baste over the burgers, this will make them extra rich & juicy.
 
Method for Spiced Red Cabbage
- Place all the ingredients in a heavy bottomed pan except half the butter.
 - Cover the mixture with a lid and cook until tender, around 1 hour.
 - Remove the lid and reduce the liquid until glossy and rich, then fold in the cold, diced butter.
 
To build the burgers
- Spoon a little red cabbage onto the base of the toasted brioche
 - Place the turkey burger on to the cabbage
 - Top with a little crumbled cheese
 - Add some rocket leaves &fried shallots
 - Top with the toasted lid & enjoy!
