All of our naturally fed sirloin steaks are taken from free-range British heritage breeds that are allowed to mature at their own pace, before being expertly dry-aged for a minimum of 32 days to relax the meat to tenderness. The result is outstanding grass fed sirloin steak that can't be beaten for its deep flavour, dark flesh, and generous marbling that caramelises and tenderises the meat upon cooking. How to cook beef sirloin steak

This is the best of British steak, prime and flavoursome, for a real Saturday night treat especially when served with home made chips and a Bordelaise sauce. About the cut

Sirloin Steak

Sirloin comes from the French "sur la longe" or above the loin from where it is cut. Ours are dry aged matured in our dedicated drying room, before being prepared into neat steaks. Our sirloin steaks boast the characteristic marbling that explains its reputation for taste and which to a butcher is a sign of the meat's quality, promising tenderness and flavour when cooked.

The smallest breed of cattle in Europe, the Dexter was bred in Tipperary in the 1750s from descendants of the ancient black cattle kept by the early Celts. Dexters were endangered in the 1930s, but now thanks to their ability to mature early feeding on grass and the impeccable eating quality of its neat, small cuts, the breed is bouncing back. This welcome resurgence has been aided hugely by frequent television appearances, and chefs heralding the standout quality of its beef.
